Sorry can’t help with a mechanic but what I can say is most mechanics can’t spell carburettor and happy to spend your money learning. I had a problem with a quadrajet on my corvette and couldn’t work out what was going on. So I bought a air fuel mixture gauge and it all made sense. From there able to fix the problem
Haven't needed to use them but this place has a good rep. I know of one 428 CJ engine they rebuilt and the owner is very pleased with their work.https://petesclassicgarage.com/
You could try Hallam Performance & Exhausts if they are near you - http://www.hallamperformance.com.au/Another club member recommended them to me - lots of old school cars when I was there, and they impressed me with the repair I needed.
