When it comes to the older Mustangs, I think you'll find that most owners look after their own cars. They're simple and easy to work on. If you're not mechanically minded at all, any good trustworthy mechanic should be able to look after you. Working on an old Mustang is no different to working on an old Falcon IMO.

Evan.

You appear to have a late model Mustang, so servicing it yourself is a bit tricky. I would take it to St. Mary's Auto Repairs and see Rob Alldritt. He services and repairs all makes and models of cars. Tony Gerace at Gerace Restorations specialises in the earlier Mustangs and carries a huge range of spares. He can also service your car. If you are north of the city, I can't offer any suggestions, but I've used both these guys myself on a number of occasions and they do a top job..
