One observation......needles and seats always look new, even when they're stuffed.

And the O ring seal isn't supposed to be re used.

Is the float floating ?. When you push it down with the cable tie, it must lift immediately.

Is the float spring correctly in place beneath the float ?.

Other than the above, I could scratch out a page on Holleys and still not pin it down, as it could be a host of things causing the bog down. Most likely its flooding though, as the correct fuel level in the bowl is vital.                                            

I'd try again with a brand new needle and seat, but if it's not OK, then it's probably going to need to visit the sick bay of the local carby shop.

 Shouldnt be much, most of the time its a bad needle n seat.
Check if the o ring looks flat edged, if it is its toast.
Check these also before you lay out some $$ for a needle n seat
 If the float has a tag check that it is up enough for the needle n seat to be effective when you adjust.
 Also take out the float and give it a shake while listening closely. It may have a pinhole and be filling with fuel.
 If you think it has,  place the float in a container and fill with boiling water . As the fuel vaper expands it will leave an air trail [ like how  you check for a flat in a bike tube under water].
You can pinpoint the hole and use 10min 2part araldite to seal the pin hole.[  plastic] ,solder if brass or buy a new one.
 Dry set the float by inverting the fuel bowl and setting the float about midway by adjusting the needle n seat[ that you have left finger loose]
Dont get too fazed, Holleys are pretty ezi to work on.

 Check your fuel filter and also check that the fuel bowl in the carb is clean

 I just read your 1st post again- sounds like you have it bottomed out low so the nut wont adjust  ya? The needle n seat should be on the up not screwed all the way down ya? Up for higher float,low for lower

  Give the acc pump screws a tweak up and try it, if the same check that the acc pump diaphram isnt cracked or damaged. Have  a closer look too, as the fuel maybe leaking down or across from elsewhere, eg shafts,screws or metering block.

A quick-kit is around $30 and has all the parts that you would req. You can get them off ebay here cheap enough and that kit will have all you'll need.Kits have base gaskets to suit both the 350/500
 If you pull the metering block, check the faces on the carb and block are flat and not too out of shape.
Grab a can of Nulon carb cleaner while your at it.
