My local wheel shop guy retired. My ride is a 67 coupe, so I need to find another good wheel alignment shop.
Who are you using in Perth for the old school cars?

Barry Curnow did a wheel alignment on my mustang 3 or 4 years ago, I was happy with the result. They are in Myaree

I recomend doing some homework into wheel alignment, caster, toe and camber so you know what to ask for.
When my wheel alignment guy left me I made my own tools and do it myself

I hear that. I have the street or track suspension set up so I use their recommended settings.

I typically use the Open Tracker settings. Sorry, said earlier Street or Track (SoT) but meant Open tracker. I have the SoT adjustable strut rods and the Open Tracker roller suspension.

STREET SPECS *
Caster:
+2° to +3.5° Manual Steer
+2.5° to +4.5° Power Steer
Camber:
0 to -.5°
Toe:
1/8″ in
STREET PERFORMANCE SPECS *
Caster:
+2.0° to +3.5° Manual Steer
+2.5° to +4.5° Power Steer
Camber:
-.5° to -1.5°
Toe:
1/8″ in
* Caster and camber settings should be the same on both sides for proper handling.

My specs
Stock suspension and tyres with electric power steering
+ 5.5 caster
0 camber
1/8 toe
Intend to add more caster as return to centre still a little light

That's within the specs above. Must handle ok.
I was recently charged a significant sum by a reputable shop and its still not right. Would love to be able to do the alignment myself.

No not really, maxxis 195 whitewalls with 0 camber.
I set 0 camber to extend tyre life

Try APE in Lansdale. Few ex WA Suspension guys there and are pretty diligent.

In your experience, which turned out better: +2° to +3.5° or +2.5° to +4.5°? For your car, of course.

In a power steering car especially electric power steering the more caster the better. I now run 8.3deg, there is no negative side adding caster
