I have a booster seat for a 5 year old in the back of a 66 coupe however the head rest restricts the view out the back to such a degree that it's dangerous. It creates a large blind spot where you look to merge into a left lane. As we know the mirrors on the 66 are tiny so on the passenger side (car is RHD) I rely on looking instead of the mirror to see if there's a car in that spot.
Driver side isn't so bad, but my seat is back quite a way so she can't really fit on that side.
Can anyone recommend a booster that has a small enough headrest to be able to see out of a 66?

Not sure about booster seat but a wide angle rear view mirror helps a lot, it just sits on your existing mirror and gives a little more view then stock. Any little bit helps.

If you are a member of your state auto club ie. RACQ. they are a wealth of info on baby seats and have a fitting service.
